Join the TOKYO EXTRA team with Brian, an international ramen expert, as he travels throughout Tokyo seeking the most tasty and extreme ramen choices. Brian shares his ramen selections with taste testers including Rina and Rena from AKB48.

In this video, Brian and Rina go to Kojimachi’s “Soranoiro” to taste a very particular dish. The shop’s special veggie soba is a bowl full of vegetables, as hinted by the name!

The soup base is made of carrots that are then blended into a paste. Five different vegetables are added, before everything is mixed with the salty soup base. The noodles themselves contain red peppers, highlighting the sweetness of the soup. And of course, for a final touch to this colorful dish, an array of seasonal vegetables is added as a topping.

For diners who want to customize further, adding mashed potato turns the soup into a sweet potage. Or, spice the ramen with yuzu kosho, for a spicy kick!

Brian ends the segment with one final bit of advice: by adding cheese and brown rice into the soup, the whole dish is transformed into a vegetable cheese risotto!
