精進料理は12世紀、禅宗と共に中国から日本に渡来した菜食料理だ。京都、嵐山の 天龍寺 では、この精進料理を僧侶が配膳してくれる。味覚を満たすだけでなく、精神をも満たすと言われるこの料理は、6種類の基本の味;  苦味、酸味、甘味、塩味、まろやさか、辛味、が織り成す調和でその名を知られている。ここ「篩月 しげつ」では、絵のように美しい庭園や息を呑む絶景、圧巻の寺院建物を眺めながら精進料理を堪能することができる。
