BRISK STAND is a fast-casual burger chain originating in Kobe, now with locations across Tokyo and beyond.
It won the 2025 Japan Burger Championship with its signature “Cut Burger” (“kitta yatsu”)—a vertically sliced burger seared cut-side down on a hot plate twice to lock in juiciness and deliver a crispy, flavourful cross-section.
This double-seared technique produces a burger worth waiting for, with succulent texture and deep flavour, and it's just one option on a menu lineup supported by classics ranging from cheeseburgers to gorgonzola-topped creations.

Brisk Stand delivers a distinctly Washoku-inspired burger, reimagining this American-born dish with Japanese culinary finesse. Every burger features 100% domestic Japanese beef patties made without fillers, seasoned only with natural Japanese sea salt, and served on whole-grain, additive-free buns. Sweet, slow-cooked caramelised onions add further depth of flavour.
Burger pricing is around ¥1,000–¥2,000, with some stores open until late. A range of side dishes (including the delectable burger-bun inspired French toast) are available.
New to Suidobashi

One of Brisk Stand’s newest stores opened in July 2025 in Suidobashi, an area beside Kanda river known for its many universities and great access to Tokyo Dome.
